Sarabba drink is a typical Sulawesi drink made from ginger, ground pepper, palm sugar, egg yolks, and coconut milk. It tastes sweet and savory, served warm and a little thick so it is suitable for cold weather while chatting casually with colleagues or family.
Although you could say the Bugis STMJ, the difference is quite far from the STMJ (ginger honey egg-milk). Sarabba does not use milk but coconut milk. Sarabba does not use honey but palm sugar. Sarabba also uses pepper that is not found in STMJ.

800 ml of water
350 grams of ginger, peeled, coarsely ground
350 grams of palm sugar, combed
1/2 teaspoon cinnamon powder
1/2 teaspoon of nutmeg seed powder
1/2 teaspoon ground pepper
200 ml thick coconut milk
45 grams of chicken egg yolk
How to make a special Sarabba Makassar:
- Boil palm sugar until it boils and dissolves.
- Add ginger, cinnamon, nutmeg, and pepper. Cook for 10 minutes until the aroma of the ginger smells.
- Turn down the heat. Add thick coconut milk slowly while continuing to stir.
- Pour 200 ml of ginger water, add 1 egg yolk, stir well. Serve while warm. (Yos)
